Recipe: Healthy Mushrooms and Beans

Try out this heart-healthy recipe for mushrooms and beans as a delicious low-sodium and high-fiber meal.

Meals that are high in fiber and low in sodium, like this mushrooms and beans recipe, are great for your heart.

Heart-healthy recipes also have low or no saturated fats, and no trans fats. Try this simple recipe out this week for a delicious meal that makes you feel great, too.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 copped onion
  • 1 minced garlic clove
  • 3 cups whole fresh mushrooms (10 ounce package), cut in half
  • 1/2 teaspoon basil (optional)
  • 1/2 teaspoon oregano (optional)
  • 2 cups cooked cannellini or great northern beans
  • 1 cup tomato sauce
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. In a large frying pan, heat oil over medium heat.
  2. Add onions and garlic, cook 2 minutes, stirring often.
  3. Add mushrooms, basil, and oregano. Cook 6 minutes, stirring often.
  4. Stir in beans and tomato sauce, heat through. Stir in Parmesan.
  5. Serve as a side dish, or over pasta or rice if desired.
  6. Refrigerate leftovers.
