‘Tis the season for friends, family, and an abundance of delicious food! Even after the festivities wind down, the joy of leftovers lingers.
While leftovers are a great way to minimize waste and save time at your next meal, it’s crucial to prioritize food safety. Here are 5 tips to ensure you can safely enjoy and extend the life of your holiday leftovers:
Always keep hot foods hot and cold foods cold. Perishable items like dairy, cut fruits, vegetables, meats, poultry, fish, and cooked foods are susceptible to bacterial growth.
Leaving them at room temperature for too long, especially within the temperature danger zone of 40-140ºF, can lead to dangerous pathogen levels causing foodborne illness.
If you find perishable food left out for more than two hours without proper heating or cooling methods (e.g., chafing dishes, sternos, ice, refrigeration, etc.), it’s best to discard them.
While bringing home extra turkey or slices of pie is a treat, it’s essential to consider if you can finish them before spoilage.
For optimal safety and to minimize food waste, consume leftovers within 4 days.
If you anticipate not finishing them in time, freeze using storage options like freezer bags, heavy-duty containers, or aluminum foil.
Freezing ensures safety indefinitely, but for the best quality, use frozen leftovers within 2-6 months.
Whether your leftovers are frozen or refrigerated, it’s crucial to reheat them properly for food safety. Use an oven, saucepan, or microwave for reheating.
You can safely reheat frozen leftovers without thawing; they can be thawed as part of the cooking process.
When using a microwave, follow USDA guidelines by heating all leftovers to an internal temperature of 165°F or until hot and steaming. Cover the food, and halfway through, rotate or stir for even cooking.
